Cheese & Caramelised Onions Toastie

Who doesn’t love a melty cheese toastie on a cold day! This has been spiked with caramelised onions cooked with Jimmy’s Sate Sauce. The onions are also perfect for your cheeseboard if you have got extra! 

Makes 4 toasties

INGREDIENTS

2 tbs Jimmys Sate Sauce (40g)

4 medium red onions, sliced

½ tbs vegetable oil

1 tsp salt 

2 tbs dark brown sugar (35g) 

1 tsp Madras curry powder*

THE REST

400g extra mature Cheddar cheese

8 slices of white bread

100g soft salted butter

 

METHOD

STEP 1

In a pan, heat oil and saute the onions for 5 minutes then add the rest of the ingredients for the onion marmalade.

STEP 2

Mix well and cook on medium heat for 15 minutes till they are sticky and soft.

STEP 3

To make the toast, layer one side of bread with cheese and the other with onion marmalade. Sandwich them together. Butter the outside generously.

STEP 4

Put the bread with the cheese side down first and pan fry on medium heat in a frying pan for 2 minutes then flip to the opposite side for another 2 minutes till the cheese is melted and the outside is golden brown.
