‘I love the smell of grilled squid, it reminds me of a holiday in the sun. The dish is inspired by my holiday in Greece but with a bit of Jimmy magic! The sauce can be made in advance and delicious drizzled over any vegetables, meat or seafood.’ Ping

INGREDIENTS

350g clean raw or frozen whole squid

1 heaped tbs Jimmy’s Sate (40g)

4 tbs good quality olive oil

2 tbs red wine vinegar

1 ½ tsp sugar

1 tbs light soy sauce

1 garlic clove, crushed

10g parsley, chopped

10g coriander, chopped

30g salted peanuts, chopped

Salt and pepper (to taste)

METHOD

STEP 1

If you are using frozen squid, make sure they are thoroughly defrosted

STEP 2

Pat dry the squid to remove excess moisture. 

STEP 3

Using a sharp knife, slice lightly on one side of the squid. Repeat with the others

STEP 4

Marinate the squid with some salt, pepper and 1 tbs of olive oil

STEP 5

In a mixing bowl, mix Jimmy’s Sate, 3 tbs olive oil, red wine vinegar, sugar, light soy sauce and garlic together till well combined.

STEP 6

Add in chopped parsley, coriander and peanuts. Set aside.

STEP 7

Heat a grill plate or fire up your bbq on high heat.

STEP 8

Grill the marinated squid on high heat for 1 minute each side. If the squid is large, cook for a bit longer.

STEP 9

Drizzle some Jimmyschurri over the grilled squid.

STEP 10

Serve immediately
